CHICKEN IN THE POT 
6 chicken breasts, boned
1 med. onion, sliced
1 sm. bag poultry stuffing (I use Bell's)
Salt
Pepper
2 sticks butter

Place 1 stick butter and onion in bottom of a bean pot or heavy covered casserole. Alternate layers of chicken breasts and poultry stuffing. Sprinkle with salt and pepper occasionally. Top with a second stick of butter and cover tightly so pot is air tight. Bake at 350 degrees for 1 1/2 to 2 hours or until done. You now have chicken, gravy and stuffing all ready to eat.
