1 1/2 lb. ground turkey 1/2 c. chopped green onion 1/3 c. minced parsley 1 egg white 1/2 c. grated potatoes 2 cloves minced garlic 1 tbsp. chopped pimento, well drained Mix together and add to meat mixture: 2 tbsp. cornstarch 1/2 tsp. salt 1/2 tsp. dry sage 1/4 tsp. pepper Mix ingredients well. Spray a 9x5 inch loaf pan with Pam; line with foil. Spoon half of meat mixture and spread evenly. Spoon meat mixture over stuffing mixture. Cover with foil. Bake in 350 degree oven for 1 hour and 20 minutes. Uncover and bake 10 minutes. STUFFING MIXTURE: 1 c. finely shredded carrots 1/2 c. chopped mushrooms 2 tbsp. lite mayonnaise 1 tbsp. milk 1/4 tsp. nutmeg 1/4 tsp. pepper 1/4 tsp. salt Steam together carrots and mushrooms for 5 minutes. Place in food processor and add mayonnaise, milk, nutmeg, pepper, and salt. Process until well mixed and spread over meat. Counts as 3 meat, 1 bread, 1 fat, 3 vegetables, 1 fruit. |
