PICNIC CASSEROLE CHICKEN 
3 tbsp. flour
2 tsp. salt
1 tsp. paprika
1 tsp. basil
8 drumsticks or thighs
1/4 c. butter
2 tbsp. oil
1/3 c. brandy
2/3 c. chicken broth
2 green onions, chopped
1 tbsp. parsley
1/2 tsp. tarragon

Blend flour, salt, paprika, basil and tarragon together. Combine butter and oil in a shallow dish. Roll chicken first in butter mix then in flour mixture. Arrange the chicken in a small Dutch oven. Sprinkle with remaining flour mixture.

Combine brandy and broth and pour over chicken. Cover and bake at 400 degrees for 35-40 minutes or until chicken is tender. Sprinkle with green onions and parsley. A whole chicken can be used.
