OVERNIGHT COOKIES 
2 c. brown sugar
1/2 c. butter or lard
2 eggs, slightly beaten
3 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. or more vanilla

Cream shortening and sugar. Add eggs and beat well. To the flour, add soda, baking powder, and salt and mix well. Add dry ingredients to first mixture and form in long rolls. Place on buttered meat platter. Cover with wax paper and place in refrigerator overnight or for several hours.

Remove from refrigerator and slice in thin slices and place on cookie sheet. Put 1 teaspoon or more filling on each cookie and top with another cookie. Bake at 350 degrees until done, about 10-12 minutes.

FILLING:

About 2 c. raisins or dates
1/2 c. brown sugar
1 tbsp. flour
1/2 c. cold water
Lemon flavoring

Cook a few minutes until thick and place between cookies. Let this mixture cool before putting on cookies. If dough is not moist enough to make in rolls, add a little milk or cream.
