ENCHILADA PIE | |
2 onions 3 bell peppers 2 cloves garlic 1 (28 oz.) can tomatoes 2 lbs. hamburger Salt and pepper 2 tsp. cumin 6 flour tortillas 2 fresh jalapeno peppers 3/4 c. grated Cheddar cheese 3/4 c. grated Monterey cheese 1 tbsp. wine vinegar Brown hamburger. Cook veggies until soft. Add tomatoes, seasoning. Simmer 10 minutes. Line bottom of 2 quart baking dish with four tortillas, put half of meat mixture -- layer two tortillas, repeat meat mixture. Cover with cheese and jalapenos (or salsa). Cover loosely with foil. Bake 20 minutes at 350 degrees covered, 10 minutes uncovered. Can be made ahead and refrigerated or frozen. |
