FLOUNDER ELEGANT 
1/4 c. butter
1 lb. flounder fillets
1 med. tomato, peeled and chopped
1/4 c. chopped mushrooms
1 tbsp. finely chopped onion
1 tbsp. finely chopped green pepper
1/4 tsp. garlic salt
1/4 c. dry white wine
1 tbsp. lemon juice
Paprika

Place butter in a custard cup or small bowl, microwave on high (100%) for 30 to 45 seconds or until melted. Brush fillets with 2 tablespoons melted butter. Combine tomato pieces, mushrooms, onions, green pepper and garlic salt, sprinkle over each fillet. Roll up fillets jelly roll fashion, starting with small end. Secure with a string or wooden picks and place in an 8 x 8 x 2 inch baking dish. Mix together remaining butter, wine and lemon juice. Pour over fillets. Sprinkle with paprika. Cover with a tight fitting lid or plastic wrap - microwave on high (100%) for 6 to 8 minutes or until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
