MOMMA'S BEST BANANA BREAD 
2 cups all-purpose flour (I use unbleached)
1 cup packed brown sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. nutmeg
1/4 tsp. salt
3 large yellowed bananas (ripened)
2 large eggs
1/3 cup oil (I use Smart Balance)
1/4 cup milk (I use 2%)
1 tsp. vanilla extract
1/3 cup chopped walnuts (optional)
parchment paper
aluminum foil

Preheat oven to 350°F. Line a 9x5-inch loaf pan with one sheet of parchment paper so it covers the bottom and hangs over the sides. Set aside.

Combine in a small bowl: flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. After mixed completely, set aside.

Combine in a large bowl: bananas, eggs, oil, milk, and vanilla.

After the wet ingredients are well blended with some remaining small chunks of mashed banana add in the dry ingredients to the large bowl and mix until blended. Then, if you desire add in the chopped walnuts. Next, pour the mixture slowly over the parchment paper, covered, pan spreading evenly. Cover the top with aluminum foil and fold down over the handles so it stays in place.

Put the pan in the oven and let bake for 30 minutes. Remove the foil after 30 minutes and bake for another 35 minutes.

Test with a knife in the center. When the knife is mostly clean the bread is done. With oven mitts on, pick up the loaf with the excess sides of the parchment paper and transfer to a cooling rack. Let cool 30 minutes.

I love this recipe, my mom used to make banana bread all the time and I can't get enough! It has a great texture and flavor. The walnuts add so much more flavor to the bread and it smells heavenly when it's baking in the oven.
