MINTED BAMBOO RICKE | |
1 cup bamboo rice 2.5 cups water 1 tablespoon olive oil 1 tablespoon finely chopped fresh mint 1 tablespoon finely chopped green onion 1 teaspoon California lemon peel (or lemon rind) salt, to taste Cook bamboo rice in water and olive oil in a saucepan or rice cooker. When all the liquids are absorbed mix in the mint, green onion, California lemon peel and salt. Remove from heat (or turn the rice cooker off) and let stand for 5 minutes.
