COUNTRY SPICE CAKE 
3 c. all-purpose flour
2 c. packed brown sugar
1 1/2 c. plain yogurt
3/4 c. butter (1 1/2 sticks)
1 tbsp. ground cinnamon
1 1/2 tsp. baking powder
1/2 tsp. nutmeg
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla extract
1/8 tsp. ground ginger
3 eggs

Preheat oven to 350 degrees F. Grease and lightly flour 12 cup ring mold or 10 inch tube pan.

Measure flour and remaining ingredients into large mixing bowl. With mixer at low speed, beat ingredients just until mixed, frequently scraping bowl with spatula. Increase speed to high, beat 2 minutes, occasionally scraping bowl.

Turn batter into prepared pan. Bake 55 to 60 minutes or until toothpick comes out clean. Cool 10 minutes on rack, remove from pan and cool.
