RAW APPLE CAKE 
3 c. flour
2 tsp. cinnamon
1 c. shortening
2 lg. eggs
2 c. chopped raw apples
1 c. black cold coffee
1 c. nuts or raisins or 1/2 c. of both
2 tsp. baking soda
1 1/2 c. sugar
1/2 tsp. cloves

Grease a 13x9 pan. Mix together flour, soda and spices. In large bowl, cream shortening and sugar. Mix well. Add eggs. Beat in flour mixture alternately with black coffee. Fold in apples, nuts and raisins. Bake at 350 degrees 45-55 minutes. Served with Cool Whip or ice cream.

OR: Make a mixture of 1/2 cup brown sugar, 1/2 teaspoon cinnamon and 1/2 cup nuts. Sprinkle on top of cake before baking.
