1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. shortening (butter)
1/2 c. peanut butter (creamy or chunky)
1/2 c. granulated sugar
1 1/2 c. (well packed) brown sugar
1 well beaten egg (best at room temperature)

Sift together flour, soda, powder and salt; set aside. Blend together very well shortening and peanut butter. Add sugars and egg to peanut butter mixture; mix until creamy. Add dry ingredients and mix well. Refrigerate to harden. Roll into small balls and flatten with a floured fork on a greased cookie sheet. Bake at 375 for 8-10 minutes.
