EASY LEMON ANGEL PIE 
4 egg yolks
3/4 c. sugar

Cream together thoroughly. Add 1/4 cup lemon juice. Cook in double boiler until thickened (about 10 minutes), stirring often. Add 1 tablespoon butter; remove from heat and fold in 2 egg whites, stiffly beaten. Pour into an 8 inch baked pie shell. Top with meringue made with remaining egg whites. Brown in moderate oven (325 degrees) for 15 minutes.

MERINGUE:

2 egg whites
4 tbsp. sugar
1/4 tsp. pure vanilla

Combine.
