STUFFED GREEN PEPPERS 
1/2 lb. ground beef
1 c. chopped onion
3 c. cooked rice
1 lg. can Rotel tomatoes
4 lg. green pepper shells

Brown ground beef and onion in skillet, stirring frequently. Stir in rice and Rotel. Spoon into green pepper shells and place in 8 inch square baking dish. Cover with remaining rice mixture. Bake at 350 degrees for 30 minutes. Yields 4 servings.
