FRIED CHICKEN PARMESAN 
1/3 c. grated Parmesan cheese
3/4 c. bread crumbs
2 tbsp. minced fresh parsley
2 tbsp. minced chives
Salt and pepper to taste
1 broiler fryer chicken (about 3 lbs.)
1/2 c. milk

Preheat oven to 375 degrees. Combine Parmesan, bread crumbs, parsley, chives, salt, and pepper. Cut chicken into serving pieces. Dip in milk, then in crumb mixture to coat. Place in shallow baking dish in single layer. Bake, uncovered, 45 minutes or until tender.
