GRILLED JAVENESE PORK | |
2 lbs. pork tenderloin, cut into 1 inch chunks MARINADE: 3 tbsp. walnuts, minced 1 c. white onion, minced 2 cloves garlic, minced 2 tbsp. ground coriander 2 tbsp. brown sugar, packed 4 tbsp. lemon juice 4 tbsp. soy sauce 1/4 tsp. crushed red pepper 4 tbsp. olive oil Mix all marinade ingredients until well blended. Add pork and stir to coat all cubes evenly. Marinate at least 20 minutes. Place cubes on skewers and grill over hot coals about 10 minutes or until pork is fully cooked. Baste with marinade while grilling. Makes 6 to 8 servings. |
