YANKEE TOMATO RELISH 
2 c. skinned and chopped tomatoes
1/2 c. onions, chopped fine
1 c. chopped celery
1/4 c. green pepper, chopped fine
6 tbsp. sugar
1 tbsp. mustard seed
1/2 c. cider vinegar

Before measuring tomatoes, squeeze out most of the juice, then combine tomatoes with all remaining ingredients. Pour into sterilized jar, cover and let stand for at least 24 hours before using. Makes about 1 quart.
