SKILLET BARBECUED PORK CHOPS 
4-6 pork chops
1 tbsp. vegetable oil
1/3 c. chopped celery
2 tbsp. brown sugar
2 tbsp. lemon juice
1/2 tsp. dry mustard
1/2 tsp. salt
1/8 tsp. pepper
2 (8 oz.) cans tomato sauce

In large skillet with a tight fitting lid, brown chops in oil over medium heat, about 5 minutes on each side. Pour off excess fat. Sprinkle celery, brown sugar, lemon juice and seasonings evenly over chops. Pour tomato sauce over all. Cover; simmer over low heat 1 hour or until chops are tender.
