SKILLET PORK CHOPS AND RICE 
4 loin chops, 1 inch thick
1 tsp. cooking oil
2 tsp. salt
1/4 tsp. pepper
1 c. uncooked rice (not Minute Rice)
10 1/2 oz. beef or chicken broth
1 c. hot water

Brown chops in oil. Pour off all but 1 tablespoon drippings. Sprinkle chops with half salt and pepper. Scatter rice over chops. Sprinkle with remaining salt and pepper. Add broth and water. Cover and simmer 50-60 minutes or until chops are tender. Serves 4.
