CHICKEN SALAD FILLING | |
1 1/2 c. chopped cooked chicken or turkey 1/2 c. mayonnaise or salad dressing 1 med. stalk celery, chopped (about 1/2 c.) 1 sm. onion, chopped (about 1/4 c.) 1/4 tsp. salt 1/4 tsp. pepper Mix all ingredients. About 2 cups filling (enough for 4 sandwiches). Beef Salad Filling: Use 1 1/2 cups chopped cooked beef in place of the chicken. Stir in 2 tablespoons sweet pickle relish, drained. Ham Salad Filling: Use 1 1/2 cups chopped fully cooked smoked ham in place of the chicken. Leave out salt and pepper. Stir in 1 teaspoon prepared mustard. Tuna Salad Filling: Use 1 can (9 1/4 ounces) tuna, drained, in place of the chicken. Stir in 1 teaspoon lemon juice. |
