CHICKEN MOZZARELLA 
Chicken breasts, boneless & skinned
Sm. jar Ragu spaghetti sauce
Italian bread crumbs
1 egg, beaten & 1 tbsp. water
Mozzarella cheese slices
butter
Olive oil

In skillet, melt equal amounts butter and olive oil (enough to brown breasts). Dip breasts in beaten egg water. Then roll in Italian bread crumbs. Brown in skillet. Place browned breasts in pyrex dish. Spread Ragu on each breast and top with cheese slices. Cover and bake at 300 degrees for 30-45 minutes. Serve with flavored rice or noodles.
