TAMALE CASSEROLE 
1 lb. lean ground beef
1 med. onion, finely chopped
1 sm. green pepper, finely chopped
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. ground black pepper
1 sm. garlic clove, crushed
1 pkg. taco seasoning
2 (8 oz.) cans tomato sauce
1 box cornbread mix
1/2 c. grated cheddar cheese
1/4 c. sliced pitted black olives

1. Preheat oven to 400 degrees and oil a 1 1/2 to 2 quart casserole.

2. In a skillet, cook ground beef, onions and green pepper until meat loses its pink color. Break up meat with large spoon as it cooks. Pour off excess fat, if necessary.

3. Add chili powder, taco seasonings, salt, sugar, pepper, garlic and tomato sauce to meat mixture. Heat to boiling, stirring. Reduce heat to simmer 10 minutes, uncovered.

4. Pour mixture into casserole dish.

5. Make up cornbread mix. Pour over top of meat mixture.

6. Bake 25 to 30 minutes or until cornbread topping is beginning to brown.

6. Garnish top with grated cheese and sliced olives (optional).
