EASY CHICKEN POT PIE 
1 (6 oz.) pkg. Stove Top stuffing mix
1/4 c. butter, cut up
1 1/4 c. hot water
1 (10 3/4 oz.) can condensed cream of chicken soup
1 c. milk
3 c. cut up cooked chicken or turkey, approximately 16 oz.
10 oz. frozen mixed vegetables or vegetables of your choice
1/2 tsp. thyme leaves
1/2 tsp. curry powder
1/2 tsp. Mrs. Dash or seasonings of your choice

In microwave safe dish, place contents of seasoning packet (from stuffing mix) and cut up butter. Add hot water; microwave for 1-2 minutes, stir to melt butter. Add bread stuffing. Let stand.

In 2 quart casserole dish, mix soup, milk, stir in chicken, vegetables (if frozen, run under hot water to thaw) and seasonings. Cook in microwave until very hot. Spoon stuffing mixture over chicken mixture. Bake in 350 degree oven for approximately 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
