WARM POTATO SALAD | |
2 lb. sm. red potatoes 1/2 c. vegetable oil 1 med. onion, chopped 1 c. chopped celery 1 tbsp. flour 3/4 c. water 1/4 c. cider vinegar 2 tbsp. sugar 2-3 tsp. salt 1/4 tsp. pepper Scrub potatoes. Cut into 1/4 inch slices. Cover potatoes with water. Bring to a boil. Cook over low heat until tender, about 15 minutes; drain. Heat oil over medium heat. Add onion. Cook a few minutes. Add celery and flour. Stir in water, vinegar, sugar, salt, and pepper. Heat until thick and bubbly. Stir in cooked potato slices. Serve warm. |
