SEAFOOD CASSEROLE 
2 slices white bread, trim crust, soaked in 1/2 c. milk
2 hard-boiled eggs, diced sm.
2 cans crab meat (can use lobster, shrimp, or combination)
1 c. Hellmann's mayonnaise
1 tbsp. lemon juice
Little onion juice or minced onion

Mix with a fork. Place in greased casserole. Bake at 350 degrees for 30 minutes. This is like a souffle, very rich. Serve salad and hot bread for luncheon; add green vegetables for dinner (but not a strong one like broccoli that would over power the delicate flavor of seafood).

Serves 4 with 2 helpings or serves 6 with one!
