FRIED RICE 
5 tbsp. oil
2 eggs
6 c. cooked rice
1 tsp. salt
1/2 tsp. lemon-pepper seasoning
12 oz. all purpose sm. shrimp
1 c. cooked roast pork or ham, diced
3 scallions, tops & bottoms, chopped
1 lg. onion, chopped
1/4 c. green peas
2 tsp. soy sauce

In a small saucepan place 2 tablespoons oil. Add beaten eggs and stir constantly until scrambled. Add to the cooked rice and set aside. Remove from pan.

In another frying pan, place the other 3 tablespoons oil. When heated, add salt, lemon-pepper seasoning, shrimp, scallions, parsley and onions and cook about 3 minutes while stirring constantly.

When pork and shrimp are golden, add green peas. Remove from heat and add heated cooked rice, soy sauce and stir well.
