EGG PLANT CASSEROLE 
1 lg. egg plant, pared
Flour
1 egg, well beaten
Seasoned bread crumbs
1 lg. Mozzarella, shredded
1/2 lb. sausage, browned and crumbled
1 lg. jar spaghetti sauce

Slice egg plant thin; dip in flour, egg, and bread crumbs. Brown. Layer in 2 quart round casserole egg plant and sauce and Mozzarella, ending with Mozzarella. Top with sausage and grated cheese. Sausage could be layered also. Bake at 350 degrees until bubbly.
