DAD'S FISH DISH | |
1 tbsp. olive oil 1/4 c. chopped onion 1/4 c. chopped green pepper 1 lg. can whole tomatoes (or fresh if in season) 1/2 lb. firm fish (white/semi-white) 1/3 lb. med. shrimp, peeled 1/3 lb. bay or sea scallops 1/2 doz. sm. clams (optional) Lemon/Herb Mrs. Dash to taste In large boiler, heat olive oil, onions and pepper until tender. Add tomatoes and over medium high heat bring to just under boil. Add fish. When fish flakes, add shrimp. When shrimp turn pink, add scallops. Season with Mrs. Dash, salt and pepper to taste. Serve with fresh bread - it's great! P.S. If adding clams, be sure to use small brush and make sure shells are extra clean. Drop in when tomatoes are just under boil and wait until heat returns before adding balance of dish. Don't Overcook! |
