SCALLOPED POTATOES 
3 tbsp. butter
2/3 c. minced onion
3 tbsp. all-purpose flour
1/2 c. sour cream
1 c. grated sharp cheese
1 1/2 tsp. salt
Dash pepper
1 1/2 c. milk
4-5 med. potatoes
Paprika

Preheat oven to 375 degrees. In a medium saucepan over medium heat, in hot butter, cook onions until tender (about 5 minutes). Stir in flour, salt, pepper until blended. Gradually stir in milk and cook, stirring constantly, until mixture thickens. Add sour cream.

In 2 quart casserole, arrange half potatoes in a layer. Pour half sauce on top; repeat. Bake covered 45 minutes. Uncover and bake 15 minutes. Sprinkle cheese and let melt. Then sprinkle paprika. 6 servings.
