TASTY VEGETABLE CASSEROLE 
2 medium onions, minced
1 lb. ground beef
1/4 tsp. pepper
1 c. English peas with juice
1 (No. 2) can tomatoes
5 tbsp. butter
2 tsp. salt
3 c. cooked rice
1 c. grated cheddar cheese

In a large skillet, cook onions in butter until soft and golden brown. Add beef and toss with a fork until red color disappears. Add salt, pepper, and rice. Mix well. Stir in peas, tomatoes, and cheese. Pour into greased baking dish and bake 15 minutes at 450°F.
