SLICED BAKED POTATOES 
4 med. baking potatoes
2-3 tbsp. melted butter
2-3 tbsp. fresh or dried herbs of your choice
4 tsp. grated Cheddar or Parmesan cheese

HERBS: Chive, thyme, parsley, sage, rosemary, or basil.

Wash potatoes and rinse. Cut potatoes in thin slices 2/3 of the way through the potato (use spoon handle in front of potato to prevent knife cutting all the way through.) Put potatoes in baking dish or individual foils and fan them a little. Sprinkle potatoes with butter and herbs. Bake at 425 degrees for 50 minutes. Remove from oven and sprinkle with cheese. Bake for another 5-10 minutes until cheeses are melted.
