GOLDEN-SAUCED FRANKS | |
1 (15 1/2 oz.) can pineapple chunks, juice packed 2 (18 oz.) cans sweet potatoes, cut up 1 1/2 lb. frankfurters, cut into 1 inch pieces (12-15) or 1 1/2 lb. smoked sausage, cut into 1 inch pieces 1/4 c. packed brown sugar 2 tbsp. cornstarch 1/2 tsp. finely shredded orange peel 1/2 c. orange juice 1/4 c. water 2 tbsp. vinegar 2 tbsp. chili sauce Sliced green onion; optional Drain pineapple, reserving juice. In a 3 quart casserole combine pineapple, sweet potatoes, and franks. Set aside. In a 2 cup measure combine brown sugar and cornstarch. Stir in reserve pineapple juice, orange peel, orange juice, water, vinegar, and chili sauce. Cook, uncovered, on 100% power (high) about 3 minutes or until mixture is thickened and bubbly, stirring each minute until the mixture starts to thicken, then stirring every 30 seconds. Pour sauce over mixture in casserole. Cook, covered, for 12 minutes, stirring only once after 5 minutes. Garnish with green onion, if desired. Serves 8. |
