CHICKEN ALA LONG | |
4 boneless chicken breasts 1/2 tsp. paprika 1/2 tsp. basil 1/4 tsp. garlic powder 1/2 tsp. onion powder 3 lg. carrots 6 lg. potatoes with skin Dash of salt 1/8 tsp. pepper 2 tbsp. butter (do not melt) Wash and clean carrots and potatoes. Do not peel. Slice carrots and cube potatoes; set aside. Wash chicken breast, shake off excess water but do not pat dry. Mix together remaining ingredients, remember to crush basil with your fingers as you add to other ingredients. Coat chicken with herb mixture and arrange in a casserole dish. Add any remaining herb mixture to the top of the chicken breast. Add carrots and potatoes to dish. Cover and bake in a 350 degree oven for 1 hour. Serves 3 or 4 people. |
