PINEAPPLE - CHERRY UPSIDE DOWN
CAKE
 
3 eggs, separated
5 tbsp. water
1 c. sugar
1 c. all-purpose flour
1/2 tsp. salt
1 tsp. vanilla extract

Beat yolks until thick and lemon colored. Add the water, then the sugar gradually; beat until light and fluffy. Fold in egg whites, beaten stiff but not dry. Sift flour and salt together. Fold gently into mixture, then add vanilla. Line cake pan with filling and pour batter over filling. Bake at 350 degrees for about 50 minutes or until brown.

FILLING:

3/4 c. butter
1 c. firmly packed brown sugar
Pineapple slices
Maraschino cherries
