CHINESE BONELESS CHICKEN 
4 whole chicken breasts
1/2 tsp. pepper & salt
1/2 c. coarsely chopped walnuts
2 tbsp. soy sauce
1/2 c. hot chicken broth (use 1/2 bouillon cube)
1 tbsp. cornstarch
1/2 tsp. sugar
5 tbsp. cooking oil

1. Bone chicken and cut in 1/2" squares.

2. Mix cornstarch, salt, pepper, sugar, 1 tablespoon soy sauce and 2 tablespoons oil.

3. Add chicken and stir to coat evenly.

4. Saute walnuts until golden brown in 1 tablespoon oil.

5. Heat 2 tablespoons oil, add chicken mixture, stir fry 2 minutes. Add walnuts, stir fry 5 minutes.

6. Stir in 1 tablespoon soy sauce and broth, scraping brown bits from bottom of pan. Cook 1 minute longer. Serve on rice. Serves 4.
