TURKEY SLOPPY JOES 
3 tbsp. olive oil
4 c. chopped onion
3 c. diced green pepper
2 cloves minced garlic
1 1/2 lb. ground turkey (may also use extra lean beef)
16 oz. tomato sauce
6 tbsp. chili sauce
1 tsp. pepper
Pinch of red pepper
32 oz. tomatoes

Heat oil in a large pot over high heat. Add onions, peppers, and garlic. Saute for 7 to 8 minutes, stirring often until the peppers are tender and the onions begin to brown. Lower the heat to medium, add the ground turkey in batches. The pan will be dry, so stir often to prevent scorching.

Cook until the turkey loses its pink color. chop the tomatoes and add them with the juice to the pot. Stir in the tomato sauce, chili sauce, and black and red peppers. Reduce the heat to low and simmer the mixture for 5 minutes. Serves 8.
