PUMPKIN BUTTER 
8 c. pumpkin, cooked and mashed
8 c. brown sugar
4 tbsp. lemon juice
1 1/4 tsp. cinnamon
1/2 tsp. ginger

Mix all ingredients in large pot. Cook over low heat for 1 hour or until thick, stirring often. Remove from heat; put in sterilized jars and process to seal.
