SQUASH CASSEROLE 
3 c. mashed acorn or butternut squash
2/3 stick butter, softened
2 eggs, well beaten
1/4 c. sugar
2 tsp. vanilla, divided

Combine squash, sugar, butter with 1 teaspoon of vanilla. Beat other teaspoon vanilla with eggs; combine with squash.

TOPPING:

1/2 c. brown sugar
1/3 c. flour
1/2 c. chopped pecans
1/2 stick butter

Using fork, mix topping together.

Put squash in 1 1/2 quart casserole; put topping on. Bake at 350 degrees for 45 minutes.
