“SWEET POTATO CASSEROLE” IS IN:
NEXT RECIPE:  SWEET POTATO CASSEROLE

SWEET POTATO CASSEROLE 
3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter

TOPPING:

1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture.

Bake at 350°F. for 35 to 40 minutes.

This has been a Thanksgiving regular (& favorite) for our family for years! Warning: we once thought with so much to do (there are 40 of us that attend) we would try a shortcut & mash canned yams. It didn't compare! It's worth the work to bake & mash fresh sweet potatoes! Everyone loves the topping! Now, marshmallows pale in comparison.
