“SWEET POTATO CASSEROLE” IS IN:
NEXT RECIPE:  SWEET POTATO CASSEROLE

SWEET POTATO CASSEROLE 
3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup evaporated milk
1 tsp. vanilla
pinch of salt
1/3 cup butter

TOPPING:

1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture.

Bake at 350°F. for 35 to 40 minutes.

I love this recipe. I am feeling like I know my way around the kitchen after making this last year and it was a big hit! I add freshly ground cinnamon and nutmeg to mine. I make it a day ahead so the flavors have time to blend well. My cousin makes the same recipe but doesn't add the spices. She always takes home left-overs and I go home with an empty casserole dish.

I found this recipe back in 2005, while googling for a sweet potato casserole dish. I came across this one. Thought it looked easy, so I would try it. I have made this dish every Thanksgiving and Christmas since. My family loves it. I even have to make it for work parties now. It has such a great flavor, and really is easy to make. The recipe is perfect, don't change it at all.

I made this for a Thanksgiving dinner with my housemates and friends. This was one of the most popular dishes. I have already had several requests for "my recipe." I added a touch of cinnamon and omitted the coconut (due to allergies). Quite wonderful.
