QUICHE FILLING FOR 1 9-INCH PIE
SHELL
 
Dice and mix 1/2 pound Swiss cheese and 1 small can crabmeat or baby shrimp. Fill a single pie shell. Beat together until frothy, 3-4 eggs and 1 pint heavy cream and spices, such as white pepper, cayenne, coriander, thyme, oregano. Pour into shell. Put foil on exposed dough and bake at 450 degrees for 45 minutes to 1 hour until golden brown.

You may add sauteed onions, garlic or steamed vegetables. Or make a vegetable quiche without meat.
