ROASTED CHICKEN WITH GARLIC | |
4 tsp. olive oil 12 whole cloves unpeeled garlic 1 frying chicken, quartered or 4 whole chicken breasts 2 c. low sodium chicken broth 2 lemons, juiced In roasting pan, heat oil. Fry garlic. Add chicken and brown both sides. Add chicken broth and lemon juice; bring to a boil. Place, uncovered, in oven at 350 degrees for 30 minutes. Remove chicken pieces and thicken broth on stove. Serve over rice. Serves 6 to 8. |
