WHITE FRUIT CAKE 
1 lb. butter
2 1/2 c. sugar
8 eggs
1 lb. candied pineapple
1 lb. candied cherries
4 c. flour
2 1/2 tsp. baking powder
1 box coconut
1 lb. pecans
1 oz. lemon extract

Cream butter and sugar. Add beaten eggs. Sift in 3 cups flour with baking powder in it. Mix well. Use other cup of flour to mix with fruit and nuts. Coat fruit with flour and add to mixture. Add extract. Cook at 250 degrees for about 3 hours or until cake tester comes out clean. Tube pan.
