SEAFOAM CAKE 
1 white cake mix
6 tbsp. green creme de menthe or 2 tsp. peppermint extract and green food coloring
1 (1 lb.) container chocolate fudge topping
9 oz. container non-dairy whipped topping

Prepare cake mix according to directions and mix in 3 tablespoons creme de menthe (or 1 teaspoon peppermint extract and green food coloring). Bake in 13 x 9 inch pan. To whipped topping, add 3 tablespoons creme de menthe (or 1 teaspoon peppermint extract and green food coloring). When cake is cool, spread fudge topping on top; then frost with whipped topping. Garnish with mint leaves and cherries.
