VANILLA PEACH OR STRAWBERRY ICE
CREAM
 
1/2 gallon milk
6 eggs
2 1/4 c. sugar
1 1/2 tsp. vanilla
1 pt. half and half or 1/2 pt. whipping cream
1 qt. squashed peaches (strawberries)
Lemon juice & sugar to taste

Heat milk to lukewarm. In bowl, beat eggs and sugar. Add a dash of salt. Take 1 cup of milk from pot to rinse bowl. Add 1 tablespoon flour. Mix all in pot and cook over medium low heat, stirring constantly until it coats a spoon. Remove from heat and add vanilla. Cool. Place in refrigerator overnight or for 4 or 5 hours until very cold. Add half and half or cream before freezing. If making peach or strawberry, add fruit. Best if frozen in electric or hand freezer. Yield: 5 quarts.
