BOSTON BAKED BEANS | |
1 c. dry navy beans 1/4 tsp. salt 3 tbsp. dark molasses 1/2 tsp. dry mustard 6 slices bacon, cut in half 1/2 med. onion, chopped Rinse beans, add to 1 quart cold water. Bring to boil, simmer 2 minutes. Remove from heat, cover, let stand 1 hour. Add salt. Cover, simmer 1 hour. Drain, reserving 1 cup of liquid. (Add water if necessary to make 1 cup.) Add molasses and mustard to liquid. Preheat oven to 300 degrees. In 1 quart casserole combine beans, bacon and onion. Pour liquid over beans. Cover and bake 3 to 4 hours. |
