PICKLED BEET SALAD 
1 pkg. cherry Jell-O
1 (16 oz.) can diced beets
1/2 c. sugar
1/2 c. vinegar
12 cloves
mayonnaise

Drain juice from beets and add to vinegar. Add enough water to make 2 cups liquid. Add sugar and cloves and simmer 10 minutes. Remove cloves and pour liquid over Jell-O. Stir until dissolved. Add beets and mold. Serve on shredded lettuce with mayonnaise.
