HOT CHICKEN SALAD DELIGHT 
3 c. cooked chicken, diced
1 tbsp. lemon juice
1 tbsp. chopped onion
1 c. mayonnaise
1/2 c. nuts (pecans, walnuts, and cashews)
1/2 tsp. salt
1 1/2 c. celery, diced
1 1/2 tbsp. pimento, diced
1/2 c. ripe black olives, cut
1 can chow mein noodles

Mix together all ingredients, except noodles. Pour into a 1 1/2 quart casserole. Refrigerate several hours or overnight. Sprinkle the noodles over top. Bake at 350 degrees for 25 to 30 minutes. Serve hot. Serves 4 to 6.
