SWEET POTATO PIE 
2 c. cooked sweet potatoes
1/4 c. butter
3 eggs
1 c. milk
1 1/4 c. sugar
1/4 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
9-inch unbaked pie shell

Cut sweet potatoes and boil until tender. Cream potatoes until smooth, then add butter, eggs, sugar, salt, nutmeg, milk and vanilla. Mix well after adding each ingredient. Pour into pie shell and bake at 425°F for 15 minutes, then reduce to 350°F.

Bake for 1 hour and 20 minutes.
