CORN AND BEAN CASSEROLE 
12 oz. can shoepeg corn
16 oz. can French style green beans
1/2 c. celery
1/2 c. bell pepper
1/2 c. grated mild cheddar cheese
1/2 c. sour cream
1 can cream of celery soup
1 can cream of mushroom soup
1 c. cooked rice
1/2 c. chopped onion
1/2 c. pickled jalapeno peppers
Seasoning -- salt and pepper to taste

Mix together. Take one roll crushed Ritz crackers and 1 stick butter, melted and layer on top. Bake 45 minutes at 350 degrees.
