FRIED JALAPENOS 
1 (14 oz.) can whole jalapenos
1/2 c. longhorn cheese, grated fine
Flour
2 eggs
1/2 c. milk
Oil for frying

Cut caps off jalapenos, or leave stems intact and make slit down the side of the peppers. Carefully remove seeds and membrane without tearing the peppers. Stuff each jalapeno with about 1/2 teaspoon grated cheese, pressing it into pepper with your little finger.

Mix eggs and milk. Roll pepper in flour, then in egg mixture and again in flour. Set aside allowing the coating to set while you heat oil to 350 degrees. Deep fry peppers until they are browned (no more than 1 minute).

Makes 6 servings.
